3 Different Ways Of Making Mayonnaise At Home

Be it french fries, burger or sandwiches, mayonnaise is an evergreen ingredient which instantly upgrades the taste of the food. Its creamy and flavoursome texture makes it an all-time favourite side. But what to do when you run out of mayonnaise? Well, you can make one at home! It has the easiest recipe which can be prepared in a jiffy. Be it tangy, sweet or spicy, you can personalise the mayonnaise according to your choice. Read on and you’ll be amazed to see how easy it is to make your own mayonnaise at home. 

Lime Mustard Mayonnaise

Ingredients required: 2 eggs, 1 cup of refined/olive oil, 1 tablespoon mustard seeds, half cut lemon and a pinch of salt. 

Directions: 

  • Step 1- In a mixer grinder jar, break open your eggs and add lemon juice
  • Step 2- Now sprinkle your mustard seeds along with a pinch of salt. 
  • Step 3- Close the lid and combine everything together by using the mixer on speed 1, for at least 1 minute. 
  • Step 4- Now open the lid and add half cup of oil. 
  • Step 5- Repeat the same process and use the mixer for another minute. 
  • Step 6- Now, finally add the remaining oil and use the mixer on speed 2 for 1-2 minutes, depending on the consistency of mayonnaise. 

You need to add oil in batches to maintain the fluffiness of mayonnaise. Adding all the oil together can prevent the mayonnaise from getting thick. You can grind it in the mixer for another minute, if you want thicker texture.

Sweet Garlic Mayonnaise 

Ingredients required: One egg, 4-6 garlic cloves, ¾ cup oil, one tablespoon sugar, 1-2 tablespoons of vinegar. 

Directions:  

  • Step 1- In a container, add the egg along with vinegar. 
  • Step 2- Use a hand blender to mix the two together. 
  • Step 3- Now add oil, a tablespoon of sugar and diced garlic cloves
  • Step 4- Again use the blender and continue mixing for 2-3 minutes. 
  • Step 5- Mix in batches of 30 seconds each. Stop for a while and again blend till you achieve a white and creamy consistency. 

Tip: Always blend the eggs and vinegar first. The acidic component of vinegar breaks the protein in eggs, which makes them fluffier and thicker.

Spicy Onion Mayonnaise

Ingredients required: One cup oil, one teaspoon cumin powder, one teaspoon red chili powder, half teaspoon sugar, half teaspoon salt, two tablespoon lemon juice and one onion. 

Directions: 

  • Step 1- First of all dice the onion finely and dry roast them in a pan. 
  • Step 2- Once crisp and golden-brown, set them aside to cool down. 
  • Step 3- Now in a container, add half cup of oil, lemon juice, sugar and salt. 
  • Step 4- Use a hand blender and mix for 1-2 minutes. 
  • Step 5- Add roasted onions, chili powder, cumin powder and the remaining oil. 
  • Step 6- Now give a final blend to everything. Mix in small batches for another 1-2 minutes and your spicy mayo is ready for use. 

You can store the leftover mayonnaise for later usage as well. Keep it in an airtight container and it will easily sustain the refrigerator for 5-7 days. You can use either a mixer jar or a hand blender for any of the above recipes. Make sure you add oil in small batches. You can fix the amount of sugar, salt and spice according to your taste and preference.
