How To Make Hotteok (Korean Sweet Pancakes)

1. Pour the flour into a big bowl and mix in the milk, sugar, yeast, and salt. After thoroughly mixing them into a dough, place plastic wrap over the basin. Allow the dough to ferment at an appropriate room temperature until it has doubled in size. 

2. Punch the dough several times with your hands to release the gas after it has risen. Cover with a wrap for 20 minutes. 

3. When the dough is finished, divide it into six equal-sized pancakes by putting some cooking oil on your palms (to prevent sticking).

4. Take a piece of dough and flatten it with your hands so that you can press roughly one tablespoon size filling onto it. After it's finished, collect the corners to seal the dough. Do the same with the remaining dough.

5. Now heat a frying pan over medium heat, and lightly coat it with cooking oil.

6. After placing the dough in the pan, cook it over medium heat for about 20 seconds, or until the bottom side is softly golden brown. 

7. Turn it over and use a professional hotteok press or a sturdy turner to press the dough down. Cook for about a minute, or until the bottom is golden brown. After one final flip, cook it on a low flame. 

8. Once the sugar filling has melted completely, heat the pan with a cover for at least one minute. If you don't cook it for longer while covering it, it will still be edible, but the sugar filling won't melt completely.

9. After transferring the pancake to a plate, repeat with the remaining dough. 

10. Make sure to have it while it's hot while drinking tea or coffee.
