Chicken wings, one of those delicate and tender parts of the bird which are enjoyed in a number of ways, have seen many variations and adaptations in several cuisines in the last few years. While earlier we would only add them to our stock pots to flavour the liquid which could be used in making soups, sauces, gravies etc, today there are a number of mix-n-match ways to incorporate chicken wings to relish.

While one of the most popular and all-time favourite of most of us remains to be the chicken lollipops, the indo- chinese tadka variety cooked to perfection with a nice vibrant orange red colour and spice factors attached to it for that perfect munch on snake bite. I personally liked experimenting with chicken wings from the classic indian recipes to wrapping It with noodles and baking/ steaming/ frying them, serving them with an assortment of dips and sauces to add to the mouthfeel and experience.

Recipe-1] PEPPERY CHICKEN WINGS

PEPPERY CHICKEN WINGS RECIPES

Ingredients:

Chicken wings- 12-14 pieces, cleaned, washed.

For the marination:

Oil- 2-3 tsp

Salt and pepper to taste

Mixed herbs-1/4 tsp

Red chilli sauce- 1-2 tsp

Soya sauce-1-2 tsp

Rum/brandy- 1-2 tsp optional

For coating and frying:

Corn flour powder- ½ cup

Maida-1/4 cup

Salt and pepper to season the flour

Oil- to deep fry the wings

Choice of dips/ sauces to go along:

Herbed dip/ mustard mayonnaise/ pesto dip/ tomato ketchup/ sweet chilli sauce/ peanut butter dip/ cream cheese mint dip

Method:

1. Prepare all the ingredients for the chicken wings recipe.

2. Ensure the wings are well cleaned and trimmed where needed.

3. In a mixing bowl, combine together the ingredients for the marination as listed.

4. Add the chicken wings into it and mix well. Marinate the wings for around 20- 30 mins.

5. In a separate bowl, combine together the flour with salt and pepper to taste, dip and coat the wings in it and remove the excess.

6. Deep fry the wings in medium hot oil for around 4-6 mins turning them occasionally to ensure even cooking, remove on kitchen paper and drain excess oil.

7. Arrange the dips as desired on the serving platter and portion out the fried wings and serve hot.

Recipe-2] HONEYED SESAME WINGS

HONEYED SESAME WINGS

Ingredients:

Chicken wings- 12-14 pieces, cleaned, washed.

For the marination:

Oil- 1-2 tsp

Sesame oil- 1 tsp

Salt and pepper to taste

Mixed herbs-1/4 tsp

Red chilli sauce- 1-2 tsp

Soya sauce-1-2 tsp

Honey- 2-3 tsp

Whiskey/ white wine- 1-2 tsp optional

For coating and frying:

Corn flour powder- ½ cup

Maida-1/4 cup

Salt and pepper to season the flour

Oil- to deep fry the wings

White sesame seeds- 2-3 tsp to sprinkle on top

Choice of dips/ sauces to go along:

Herbed dip/ mustard mayonnaise/ pesto dip/ tomato ketchup/ sweet chilli sauce/ peanut butter dip/ cream cheese mint dip

Method:

1. Prepare all the ingredients for the chicken wings recipe.

2. Ensure the wings are well cleaned and trimmed where needed.

Green chilli sauce- 1-2 tsp

Soya sauce-1-2 tsp

Mango pickle masala- 1-2 tsp

White wine- 1-2 tsp optional

For coating and frying:

Corn flour powder- ½ cup

Maida-1/4 cup

Salt and pepper to season the flour

Oil- to deep fry the wings

Choice of dips/ sauces to go along:

Herbed dip/ mustard mayonnaise/ pesto dip/ tomato ketchup/ sweet chilli sauce/ peanut butter dip/ cream cheese mint dip

Maida-1 cup

Bread crumbs-1 cup

Salt and pepper to season the flour

Oil- to deep fry the wings

Choice of dips/ sauces to go along:

Herbed dip/ mustard mayonnaise/ pesto dip/ tomato ketchup/ sweet chilli sauce/ peanut butter dip/ cream cheese mint dip
